Care of the vines continues with all the decisions and actions relating to vinification. Pressing is a vital procedure. In the past few years the Launays have invested in two presses, one of 4000 kg (Bücher) and the other of 8000 kg, which ensures that the specific nature of each terroir will be preserved and guarantees the quality of the wines. There is still room for improvement in running these presses and the Launay brothers are trying to work on the part involving the different levels. The juices of the cuvée are separated into two, as are those of the first and second pressings. Fermentation temperatures and density are carefully controlled to maintain the organoleptic qualities of the musts. Limiting the addition of oxygen, pumping and mixing the wines also improves quality for better storing and balance.
